Description
Veg Pulav is a mildly spiced, aromatic rice dish made with basmati rice and a medley of vegetables, flavored with whole spices and herbs. Popular across India for its balanced flavor and one-pot convenience, it is often served as a main course or festive side in both North and South Indian homes and restaurants.
The dish is prepared by sautéing whole spices like bay leaf, cloves, cinnamon, and cardamom in ghee or oil, followed by rice and mixed vegetables such as carrots, beans, green peas, and potatoes. It is then simmered with water or vegetable stock until the rice is fluffy and the flavors are absorbed. A touch of mint or coriander is added for freshness.
Veg Pulav is commonly served with raita, pickle, or kurma in cities like Coimbatore, Hyderabad, and Kochi, and remains a comforting and festive rice option among Indian families in Mississauga, Brampton, and Calgary.
