Description
Idiappam, also known as string hoppers, is a traditional South Indian and Sri Lankan dish made from rice flour dough pressed into fine noodles and steamed. It holds a special place in the culinary traditions of Kerala and Tamil Nadu, where it is often served as a breakfast or dinner staple.
The dough is prepared by mixing roasted rice flour with hot water and a pinch of salt, then pressed through a string mold onto small mats or banana leaves. The delicate nests of rice noodles are then steamed until soft and fluffy. Idiappam is mild in taste, making it the perfect base for rich accompaniments like vegetable stew, coconut milk, chicken curry, or egg roast.
In Kerala households, idiappam is especially popular in districts like Ernakulam, Kollam, and Thrissur, and continues to be a familiar comfort food among South Indian families in cities such as Edmonton, Brampton, and Mississauga.
