Description
Aloo Gobi is a dry, spiced vegetarian dish made with potatoes and cauliflower, commonly prepared in North Indian households and now widely enjoyed across South India as well. Known for its simplicity and balance of flavor, it is a staple in daily meals and vegetarian thali offerings.
Potatoes and cauliflower are sautéed with onions, tomatoes, green chilies, and ginger, then cooked with a blend of spices including turmeric, cumin, coriander, and garam masala. Curry leaves and mustard seeds are sometimes added in South Indian versions, while kasuri methi or amchur may be included in Punjabi-style preparations. The vegetables are cooked until tender but not mushy, allowing the masala to coat each piece evenly.
