Description
Alleppey Veg Curry is a traditional Kerala-style vegetable curry inspired by the coastal flavors of Alappuzha. Known for its balanced blend of spices, tanginess, and coconut richness, this dish is often prepared in homestyle kitchens and Sadya spreads throughout central Kerala.
A variety of vegetables like ash gourd, carrots, beans, and raw banana are simmered in a coconut-based gravy with turmeric, green chilies, ginger, and cumin. What distinguishes the Alleppey version is the inclusion of souring agents such as raw mango or tamarind, which give the curry its signature tang. The dish is finished with a coconut oil tempering of mustard seeds, curry leaves, and dried red chilies.
