Description
Chicken Malli Peralan is a semi-dry Kerala chicken dish made with fresh coriander leaves (malli) and a blend of roasted spices. Especially popular in central Kerala districts like Kottayam and Ernakulam, this dish is known for its vibrant green color, thick masala coating, and fresh, herb-forward flavor.
Boneless or bone-in chicken is marinated with turmeric, crushed pepper, ginger-garlic paste, and cooked in a green masala made from coriander leaves, green chilies, coconut, and whole spices. The curry is slowly reduced until the masala clings to the meat, giving it a roasted, slightly crisp texture without losing its moisture. Curry leaves and coconut oil finish the dish with a distinctly Kerala aroma.
