Description
Matka Chicken Biryani, locally known as Kudukka Biryani in Kerala, is a traditional dum biryani slow-cooked in a sealed clay pot to enhance aroma, moisture, and depth of flavor. This preparation is especially popular in Malabar districts such as Kozhikode, Malappuram, and Kannur, where matka cooking is part of festive and communal dining traditions.
The dish begins with marinated chicken cooked in a rich masala made from shallots, tomatoes, green chilies, ginger-garlic paste, garam masala, and fresh herbs. This is layered with partially cooked jeerakasala or basmati rice, caramelized onions, mint, ghee, and coriander. The matka is sealed with dough and placed over low heat, allowing the flavors to meld slowly inside the pot while maintaining tenderness and fragrance.
Matka Chicken Biryani is often served at weddings, family feasts, and restaurant specials, and continues to gain popularity among Kerala food lovers in cities like Brampton, Surrey, and Edmonton.
