Description
Matka Vegetable Biryani is a slow-cooked, clay pot biryani made with aromatic basmati rice, mixed vegetables, and traditional Indian spices. Inspired by the dum biryani cooking method, this vegetarian version is sealed and cooked in an earthen pot (matka or kudukka) to infuse earthy aroma and retain moisture and flavor.
The preparation includes sautéed vegetables like carrots, beans, green peas, and potatoes, layered with partially cooked rice and flavored with mint, fried onions, saffron, and whole spices. The pot is sealed with dough and placed over low heat, allowing the biryani to cook gently in its own steam, locking in all the fragrance and richness.
Matka Vegetable Biryani is commonly served during festive occasions or as a premium vegetarian main course in Kerala and Tamil Nadu. It is also gaining popularity in modern Indian restaurants and home kitchens across Mississauga, Brampton, and Scarborough.
