Description
Mutton (Goat) Chaps is a rich, semi-thick South Indian curry made with goat ribs or bone-in cuts, slow-cooked in a flavorful masala base. Popular in Tamil Muslim and Kerala Christian households, this dish is often prepared during festive occasions, Sunday meals, or as a hearty accompaniment to parotta or rice.
Goat meat is marinated in turmeric, chili powder, and ginger-garlic paste, then cooked with onions, tomatoes, green chilies, and whole spices like cinnamon, cardamom, and cloves. Roasted coconut, poppy seeds, or cashew paste may be added for body and depth. The curry is reduced to a medium-thick consistency where the masala clings to the meat, enhancing flavor and texture.
Mutton Chaps is widely served in homes and mess kitchens across Madurai, Tirunelveli, and Palakkad, and remains a festive meat curry among South Indian families in Mississauga, Scarborough, and Brampton.
